Our culinary team is devoted to sourcing high quality ingredients and applying their craft and artistry to transform them into a unique culinary experience.
We plan to source most of our ingredients from farms within a 20-mile radius, including our own farms. We are committed to sourcing local, regenerative, ethically produced ingredients.
By emphasizing seasonality, ripeness, freshness, and the time from farm to table, we are maximizing the flavor and nutritional value of our food. By investing in producing and sourcing locally we are keeping money in our community, and helping to support a thriving local agriculture.
Our orchards span 60 acres and over 80 varieties. Many of the varieties we grow are cultivated, selected, and managed specifically for making the highest quality sweet and hard cider.
Our farm team and cider makers work together in an integrated process beginning in our nursery and ending in your glass; our goal is to make some of the best ciders in the world, right here in Iowa!
