Recipe:
1 lb crumbled tofu
1 diced red onion
2 cloves of minced garlic
2 tsp cinnamon
1 tsp cumin
1 tsp ground allspice
1 Tbsp dried oregano
1 Tbsp smoked paprika
1 Serrano chili, chopped
1 cup sliced green olives
2 Tbsp sherry vinegar
1/2 cup raisins
1/4 cup chopped capers
2 cups chopped canned tomato
1 Tbsp sugar
1/4 cup olive oil
1 cup cilantro
Instructions:
Set a pan over medium-high and heat olive oil. Sauté diced red onion for around 5 minutes or until browned. Add firm, crumbled tofu and sauté before adding your spices. Properly brown the tofu for several minutes, scraping up any stuck bits to get the most flavor. Stir in cinnamon, cumin, all spice, oregano, paprika, and Serrano chili.
Stir-in canned tomato, and let simmer for 10 to15 minutes, stirring occasionally, to let the flavors build. Add herbs, such as cilantro, just a few moments before serving.
